So this particular day when I visited my fav local fish shop – Pops Fish Market, this was a fresh catch! Brought it home, and dove into my pantries. There I found the Archer Farms Black Bean and Corn Salsa from Target.

Ingredients
- 2 6 oz White Fish wild/local cod works well. Try to get pieces 1-1.25 inches thick
- 1/2 cup Black bean & corn salsa Try Archer brand from Target
- 2 Tbsp Plain Greek Yogurt Try Fage 2-4%
- 1 tsp lime juice
- 1/4 tsp Dry rub 1/8 tsp cumin, 1/8 tsp blackened red fish seasoning, dash S/P
- 2 Tbsp Shredded cheese mozzarella & cheddar

Instructions
- Pre-heat oven to 400 degrees.
- Mix together spices to make dry rub in small bowl and sprinkle or rub onto fish.
- Spray dish and fish with olive oil water (see my tool!)
- Bake fish for about 15-18 minutes for a thick piece 1 – 1.25 inches thick
- While fish is baking, mix yogurt, salsa and lime juice in small bowl.
- Take fish out of oven and top with salsa and yogurt mix.
- Sprinkle with shredded cheese and diced tomatos!
